Zucchini Bread

Home grown zucciniZUCCINI BREAD (BECKY’S RECIPE)

This is the real reason we grow zuccini

2 cups flour
  • ½ cup packed br sugar
  • 6 T white sugar
  • 1 ¼ t cinnamon
  • ½ t ginger
  • 1 t bkg soda
  • 1 cup oats
  • 3 large eggs
  • ¾ cup veg oil
  • 2 t vanilla
  • 2 cups grated zucchini (drain if needed)
  • ½ cup buttermilk
  • 1 cup chopped walnuts

Don’t over mix when putting it all together.

Bake 50-65 min in loaf pan

Have you heard of Banana bread?

I too have wondered why we don't make bread from other squash. I am thinking the texture after grateing the vegetable may have something to do with it. But mashed Banana's make good bread also so there goes that consideration.

One thing that is nice about the zucchini is the abundance of the crop and the ease to grate and freeze for future bread on those cold winter nights. Beckys recipe is really good, she usually gives me a loaf for our enjoyment, of  course now my husband wants me to make our own since zucchini is his favorite plant in the garden and he plants plenty. We grated alot of zucchini and put into individual bags of 2 cups each and then into a larger bag to freeze.

Perhaps you should try other vegetables for the above recipe and let us know how it turns out. What makes cooking a individual thing of Art is the willingness to experiment. The greatest Cooks make up their own dishes.

Zucchini Bread

I love Zucchini Bread! My grandmother used to make it when I was young, but no one else I know outside my family has heard of it, and I've actually been laughed at for mentioning it. I guess it would sound a little funny to those not in the know. But I've always wondered, why is it that zucchini works as a bread, but not other similar vegetables like squash, eggplants, etc.? Though somehow pumpkin bread is delicious.. and carrot cake... I cant explain these things, I just eat them.
